Herb Stuffed Red Snapper by Chef Haruki
Ingredients
ü Whole red snapper
ü Lemon sliced thinly
ü 3-4 garlic cloves sliced
ü Salt and pepper for seasoning
ü 1 teaspoon each of Fennel Seeds, Cumin, Coriander (pan fry them in medium heat few minutes and crush them)
ü Bunch of Rosemary, Thyme, Parsley
Instructions
ü Season the fish with generous amount of salt and pepper (both in and out) and rub the fish with crushed spice mix.
ü Stuff the fish with garlic, lemon, fresh herbs, wrap the fish in aluminum foil and pour half cup of white wine then seal the foil keeping small opening.
ü Then bake it to tender perfection (20 min in 180-degree oven) and enjoy straight out of the oven. This is ideal to serve with basil pesto spaghetti.
Get your children involved. I buy the whole fish as-is and have our son clean it up - he really enjoys doing this... As a matter of fact, he made this all by himself with little help from me.
